Pecan Shortbread Cookies (GF)

Ingredients

3C almond flour

1/4 tsp sea salt

1/4 tsp baking soda

1 C pecans, toasted and chopped

5 Tablespoons Honey

1/2 cup butter melted (114g)

1 Tablespoon Vanilla extract

Preparation

1. In a large bowl, combine almond flour, salt, baking soda and pecans.

2. In a smaller bowl, combine honey, butter and vanilla.

3. Combine the two and roll into a log about 2 1/2″ diameter on a length of parchment paper  

4. Wrap in the parchment and chill until firm.

5. Slice thinly (1/4″) and place into a lined baking sheet. 

6. Bake 180C/Gas 4 for 7-10 minutes. Cool and serve.

Makes 24 biscuits
