Homemade GF Starbucks Orange Cake

Ingredients

  • 2 oranges
  • 4 eggs
  • ¾ cup honey
  • 2 cups ground almonds
  • ½ teaspoon salt
  • 1 teaspoon baking soda

Method

  1. Wash the oranges and boil them whole (peel and all) for 1 ½ hours, or until soft
  2. Place whole oranges (peel and all) in a food processor and blend until smooth
  3. Process in eggs, honey, almond flour, salt and baking soda until well blended
  4. Pour batter into a greased 9″ cake pan (round or square)
  5. Bake at 190°C for 45-50 minutes, until a toothpick stuck in the center comes out clean
  6. Cool in the pan for 2 hours
  7. Serve

Ganache

Ingredients

  • 1 cup of cocoa powder
  • 3/4 cup of virgin coconut oil
  • 1/2 cup of honey
  • dash or two of sea salt
  • 1 teaspoon vanilla extract (optional)

Method

  1. Gently melt the coconut oil in a saucepan (you don’t want to heat it, just melt it)
  2. In a food processor, combine all of the ingredients and pulse until well combined.
  3. Scrape into a small bowl and cool until it has hardened to desired consistency before spreading.
