Chilled Carrot Soup with Indian Spices

Ingredients 

4 large carrots, peeled and sliced

1 large onion, peeled and sliced

1 tbsp oil

1/2 tsp coriander

1/2 tsp cumin

1/2 tsp ginger

1 pint stock

Salt & pepper

lemon juice

1 Tbsp snipped chives

Method 

1. Fry veg 10 min until onion is soft

2. Add spices & cook, stirring 1 minute

3. Add stock and bring to boil. Simmer 10 min until carrots are tender

4. Puree. Cool completely. Chill until cold

5. Add salt & lemon juice to taste.

6. Garnish with chives
